With single digit temperatures in Northern Westchester this week, there is nothing better than a hot pot of soup.
Children at Mount Kisco Child Care Center celebrated the cold weather with Maurice Sendak’s book, Chicken Soup with Rice. They made their own pot of chicken soup with rice for lunch as a Feed Me Fresh activity.
This recipe is a simple basic way for toddlers and preschoolers to make a chicken soup with rice. Try it once, try it twice, your kids will think it’s nice!
Chicken Soup with Rice
4 cups chicken stock
1 cup diced, cooked chicken
1/2 cup carrots, shredded
1/4 cup minced onion
1 cup frozen peas
1 cup cooked rice
Add ingredients into a stock pot, simmer, season and serve
