Feed Me Fresh Nut Free Granola Bars

This granola bar is not too sweet, contains no nuts and kids of all ages love to make and eat it.

Teachers and children at Mount Kisco Child Care Center cook and eat great food every week as part of their Feed Me Fresh garden to table program. Here's a recipe from this month's curriculum.

Feed Me Fresh Recipe - Nut Free Granola Bars


Ingredients:
2 Eggs
1 teaspoon Vanilla extract
1 tablespoon honey
1 cup unsweetened coconut ribbons
1/2 cup pepitas (shelled pumpkin seeds)
1/3 cup sunflower seeds
1/3 cup dried apricots
1/3 cup dried cranberries
1/4 cup mini chocolate chips
a pinch of salt
a pinch of cinnamon

Directions:
Grease a 9″x9″ pan with coconut oil other vegetable oil.
Using a blender or food processor, chop the coconut ribbons to the size of oatmeal.
Chop the pepitas to roughly the size of sunflower seeds.  
Apricots and cranberries should be chopped to the size of raisins or slightly smaller.
Combine all the dry ingredients together in a bowl.
Whisk together the eggs, honey, salt and cinnamon and pour over the dry ingredients. Mix well.
Pour into pan and press down evenly. Bake in a 350 oven for 15-18 minutes.
